Fruit Puree

If you need to make a mousse, sorbet, sauce or cocktail but you’re missing the puree needed, just make your own. It’s just the fruit, sugar being 10% of the weight, and some lemon juice to prevent oxidation.

It’s best to use frozen fruit because it is picked at it’s most sweet and ripened point and then frozen, where as fresh fruit from the market may look delicious but have no flavor at all or be sour.

Ingredients

  • 454 grams Fruit

  • 45 grams Granulated Sugar

  • 2 teaspoons Lemon Juice

Directions

  • Combine all the ingredients in a sauce pot, and cook to a simmer, stir occasionally so it doesn’t burn.
  • Turn off the heat, and with a Hand Blender, blend the mixture till it’s smooth.
  • Cool, it then transfer to a container to freeze or refrigerate and use as necessary.
